It was such a beautiful sunny winters day today it was hard to come
inside, but I wanted to try making the Chestnut Anzac biscuits without
flour, so I had to leave the rest of the pruning of the roses and plum
trees for another day. I'd run out of chestnut flour, so it was the
perfect opportunity to try making the biscuits out of chestnuts.
I steamed some peeled chestnuts first and then rather than process the
chestnuts into a chestnut meal, I thought I would have a go at putting the
steamed chestnuts into the Thermomix with the other ingredients and give
it a 35 second process at speed 5 to see how it would turn out. Success.
The Chestnut Anzac biscuits turned out just as yummy and just as nice as
when they were made with chestnut flour.
Here is the new recipe:
120gm organic butter
100gm raw honey
1 tsp Bicarbonate of Soda
100gm organic Traditional Rolled Oats
2 cups of organic peeled steamed chestnuts
50gm organic Coconut Chips
Preheat oven to 160C. Place baking paper on a biscuit tray. Place butter
and honey into TM bowl. Heat for 2 minutes at 60C on speed 2 until the
butter is melted. Place bicarb soda into TM bowl and mix for 5 seconds on
Add remaining ingredients and set dial to Closed Lid Position and mix for
35 seconds on Speed 5.
Place a heaped dessertspoon of mixture into the palm of your hand and roll
it into a ball. Place ball on the biscuit tray and flatten it with a fork,
leaving space between each one for spreading.
Bake 15 minutes or until golden brown.
Remove from oven and allow to cool on tray for 5 minutes, then transfer to
wire racks to cool completely.
Makes 16 biscuits.
